Cajun Shrimp Fahitas

Cajun spice and shrimp is a classic pairing and this simple dish allows both flavours to shine through. There is no need to overcomplicate when you have fresh and flavourful ingredients to work with. Bouncy pink prawns, creamy avocado and spicy salsa, wrapped up snugly in a warm tortilla make for a tasty, healthy and easy meal, straight off the Louisiana coast.

Ingredients:

18 large raw pink or white shrimp, de-shelled and cleaned.

1 red bell pepper

1 green bell pepper

1 red onion

1 large clove of garlic

Cajun seasoning (or make your own mix according to your palette with garlic powder, onion powder, smoked paprika, hot paprika or cayenne pepper, dried oregano and dried thyme)

1 tsp sugar

1/4 tsp salt

freshly ground black pepper

extra-virgin olive oil

6 flour tortillas

1 large/2 medium ripe avocado

spicy tomato salsa, to serve

full fat sour cream, to serve

1 lime, to serve

Method:

– slice onion and bell peppers into thin strips

– heat olive oil in a large, non-stick skillet over a medium-high heat

– sauté the garlic until fragrant, then add the onion for 30 seconds

– add the bell peppers and sprinkle with the sugar

– stir-fry, tossing the ingredients together constantly until soft and slightly caramelised

– add salt to taste (1/4tsp recommended)

– set the onion and bell peppers to one side in a bowl

(preheat oven to 50*c)

– sprinkle the shrimp liberally with Cajun seasoning

– heat more olive oil in your skillet and stir-fry the shrimp until cooked through

– return the onion and bell pepper to the pan with the shrimp and warm through on a low heat

– meanwhile, wrap the tortillas in foil and place in oven to warm

– slice the avocado

– to serve, place 2 tortilla wraps on each plate, top with the shrimp, onion and peppers mix (allowing 3 shrimps per wrap), place over slices of the avocado, spoon over tomato salsa and sour cream, fold up and use a lime segment to keep the wraps together
