Orange flour

Pineapple Rice



2 cups pre-cooked and cooled long-grain rice

groundnut or vegetable oil

2 tbsp light soy sauce

salt and black pepper

2 tbsp grated fresh ginger

2 tbsp finely chopped spring onions

3 tbsp finely diced red and yellow bell peppers

1 tbsp sesame oil

1 cup fresh pineapple, diced

crispy garlic flakes (optional)


– heat oil over a medium heat in a wok or large frying pan

– add the soy sauce

– fry the bell peppers, spring onion and ginger until softened and fragrant

– add the rice and stir-fry over a slightly fiercer heat for 4-5 minutes, until heated through

– add the pineapple and stir-fry until it begins to golden

– drizzle over the sesame oil, toss through and serve immediately

– garnish with crispy garlic

(Serves 3)

*This dish pairs nicely with a creamy coconut milk-based chicken curry.
