Orange flour

Fruit & Nut Milk Chocolate Tiffin Bites

January may be on its way out, but I still have a few odds and ends from all those Christmas biscuit selections lying around. This recipe is a great way to use these up and a fun and easy treat to make with young kids.

200g milk chocolate

65g unsalted butter

3 level tbsp golden syrup

170g biscuits of your choice (shortbread, digestive biscuits/graham crackers work best, but any biscuits will do as long as they are not filled), roughly crushed

50g raisins

40g hazelnuts, roughly crushed

– break chocolate into a medium sized bowl and melt with butter and syrup over a pan of boiling water – melt gently, do not let bowl touch boiling water

– once melted, remove from heat and stir in crushed biscuits, hazelnuts and raisins until well combined

– press mixture into chosen silicone moulds, or simply use a square tin lines with cling film so that you can lift out the tiffin once set

– leave to cool, then place in fridge for 2-3 hours to set before removing from moulds or cutting into squares

*must be kept in fridge
