Milk and White Chocolate Chunk Fondant Brownies

Break through the thin and crisp crust and beneath oozes a rich triple chocolate filling. The ultimate indulgence warm from the oven!

Ingredients:

185g 70%+ dark chocolate

185g salted butter

3 eggs, at room temperature

175g golden caster sugar

100g white caster sugar

40g good quality cocoa powder

85g plain flour

50g white chocolate

50g milk chocolate

Method:

(preheat oven to 180*c and line an 8″ square baking tin with greaseproof paper)

– place dark chocolate and butter in a bowl and melt gently over a pan of boiling water

– meanwhile, whisk together the eggs and sugars with an electric whisk until pale yellow and doubled in volume

– chop milk and white chocolate into 1/2-1cm chunks

– Β when butter and dark chocolate has melted fully, allow to cool slightly, then fold into the mousse-y egg mixture

– sift flour and cocoa powder into the mix and fold in gently

– fold in chocolate chunks and pour all mixture into your prepared baking tin

– bake for 25-30 minutes, until crisp on top and still with a slight wobble when gently shaken

– leave to cool in tin before cutting into squares

*serve warm with vanilla and chocolate ice cream for a decadent dessert
