Cranberry and Apple Breakfast Bars


A great breakfast bar for when you are eating on the run at this busy time of year.


cranberry filling:

1 pint cranberries (fresh or frozen and defrosted overnight)

1/4 cup honey

1/4 cup apple juice

1/2 tsp vanilla essence

2 tbsp cornstarch + 1 tbsp water to form a paste

oat layers:

3 cups rolled oats

2 tsp ground cinnamon

1 1/2 tsp baking powder

pinch of salt

3/4 cup unsweetened stewed apples, pureed

6 tbsp honey

6 tbsp water

1 tsp vanilla essence


(preheat oven to 180*c and line a 7″ square baking tin with non-stick baking paper)

for the filling:

– in a small saucepan, combine with cranberries, honey and apple juice

– bring to the boil on a medium heat and allow to simmer for a few minutes

– gently crush the cranberries a little, then add the vanilla and cornstarch mixture and stir until thickened

– remove from heat and set aside

for the oats:

– blend half of the oats into a fine powder in a food processor, then place in a bowl with the other half of oats, cinnamon, baking powder and salt

– mix dry ingredients together well, then stir in the wet ingredients

– spoon half of the oats mixture into your baking tin – use your fingers to spread out and press down to create a solid layer

– spoon the cranberry filling over the oats, the cover the the remaining oats (I pressed handfuls of the oats into patties and placed carefully over the cranberries to avoid creating a mushy mess!)

– bake in your preheated oven for 25-30 minutes, until the top is slightly browned

– allow to cool before cutting into bars

*enjoy for breakfast with a dollop of vanilla yoghurt or on its own if you are eating on the run!

**this would also work well as a dessert served slightly warmed with ice cream
