Cranberry and Mulled Wine Mini Loaves


A lightly spiced sponge with delicious juicy cranberries and a mulled wine glaze – vibrant colours and christmas flavours, perfect for late-night nibbles with a mugfull of mulled wine.


170g golden caster sugar

170g salted butter, at room temperature

3 eggs, at room temperature

170g self-raising flour

1 tsp vanilla essence

1/2 tsp ground cinnamon

1/2 tsp ground ginger

1/4 tsp freshly grated nutmeg

bowlful of fresh cranberries (or frozen cranberries left to defrost in the fridge overnight)

1 cup mulled wine

1tbsp caster sugar


(preheat oven to 180*c and place your mini loaf cases onto a baking tray)

– cream together the sugar and butter until pale in colour and there are no lumps of butter

– add the eggs one at a time with 1 tbsp of the flour to prevent curdling

– mix in the vanilla essence and spices

– sift the flour into the bowl and gently fold in with a metal spoon

– fold in the cranberries, being careful not to crush them

– divide the mixture between the loaf cases, filling them about 3/4 full

– bake for 20 minutes until risen and golden

– while baking, prepare the glaze by heating mulled wine with the sugar until slightly reduced

– while still warm from the oven, pour the glaze over the loaves – prick the loaves several times beforehand with a tooth pick to allow the glaze to sink into the sponge, adding flavour and moisture

– leave cakes to cool, then serve with a glass of mulled wine or a mug of spiced tea!
