Raspberry, Blueberry & Elderflower Granola Parfait



healthy honey granola:

350g rolled oats

125g flaked almonds

1 tsp fine grain salt

110g/235ml melted coconut oil

125g honey

1/2tsp vanilla essence

80g dried blueberries


fresh raspberries

fresh blueberries

blueberry and elderflower (fat-free, probiotic) yoghurt

handful flaked almonds, toasted (to garnish)



(preheat over to 180*c and line a baking tray with baking paper)

– combine all dry ingredients (apart from the dried blueberries) in a large bowl

– stir in oil, honey and vanilla

– turn granola out onto your prepared tray and spread out into an even layer

– bake for around 25 mins (or until lightly golden), stirring halfway through the cooking time

– remove from oven – granola will crisp up as it cools

– once cool, stir in dried blueberries

*store in an airtight container for 2 weeks, or freeze until needed


– to make your parfait, layer yoghurt, your homemade granola and fresh raspberries and blueberries in a glass, repeating these layers until you reach the top (your last layer should be yoghurt)

– sprinkle over toasted flaked almonds to garnish
