Orange and Walnut Brownies

I have been searching for the perfect brownie recipe for what seems like forever and this one is definitely a contender for top spot! Definitely not for the waist-line conscious; these are rich and buttery with a deep orange flavour. I decided to put the walnuts in large pieces on the top of the brownie rather than mixing them into the batter so you get a beautiful smooth and fudgy texture when you bite into the brownie, uninterrupted by pieces of hard nut. (Plus, for those who don’t like nuts, the easily can pick them off!)

Ingredients:

250g good quality dark chocolate (70% cocoa solids)

60g plain flour

60g cocoa powder

1/2 tsp baking powder

pinch of  salt

300g caster sugar

250g butter, softened

3 eggs + 1 yolk

1 tsp orange extract

handful walnuts

zest of 1 orange

Method:

(Preheat oven to 180*c and line a 9″x9″ baking tin with baking paper)

– toast the walnuts in the oven for a couple of minutes, then set aside to cool and roughly break up into odd size pieces

– melt 200g of the chocolate in a bain-marie, then set aside to cool slightly

– chop the remaining 50g of chocolate into small pieces

– sift flour, cocoa powder, baking powder and salt into a bowl

– beat together sugar and butter until pale, then add the eggs one at a time

– stir in the orange extract and melted chocolate

– beat in 1 tbsp of flour to help the eggs combine, then fold in the remaining dry ingredients, along with the chopped chocolate pieces

– pour mixture into baking tray and sprinkle over the walnut pieces and orange zest (push into the mixture slightly to avoid walnuts and zest burning)

– bake in the oven for around 30 minutes until cooked through but still gooey in the middle (it should have a slight wobble when you remove it from the oven as it will solidify further while cooling)

– leave to cool in tray for 20 minutes, then transfer to a wire rack to cool completely

– slice into squares and enjoy!
