Orange flour

Dark Chocolate, Fruit and Brandy Flapjacks

A British favourite with a twist.  With the addition of some festive flavours, this version wouldn’t be out of place amongst the brandy snaps, warm mince pies and spicy christmas cake on christmas day.
4 1/2oz butter
3oz soft brown sugar
3 large tbsp golden syrup
9oz porridge oats
2oz mixed dried fruit (sultanas, raisins, currants, candied rind)
3oz dark chocolate
candied orange and lemon rind
edible silver glitter
(preheat oven to 180*c and grease and line a 9″ square baking tray)
– soak the dried fruit and rind in brandy overnight
– melt the butter with the sugar and syrup over a gentle heat in a saucepan
– remove from heat and add the porridge oats and strained dried fruit
– add 2 tbsp of brandy
– spoon into baking tray and press down with back of spoon
– bake in over for 15-20 mins, or until golden
– when out of over, leave in tray to cool
– melt chocolate in a small bowl over a pan of hot water (bain marie)
– stir in 1 tbsp brandy
– pour over flapjacks and spread out to create a thin layer
– sprinkle over chopped candied rind
– once the chocolate has set, sprinkle over edible glitter
– cut into pieces with a sharp knife
makes 8 flapjacks
